I am a profession chef and being a chef I want my food to be healthy and at the same time delicious. Just like every chef we do know that professional stainless steel is the best metal to cook food specially for frying/sauting/searing. You can't get the ceremalization(browning due to the burning of starch and sugar) of meat with water in a non stick or cast iron pan. More ever non stick pans aren't good for cooking because of the non stick costing that release toxic material if overheated.so...
