As mentioned the thickness of paper is reliable and easy to work with. I won't recommend water color but you can use pencil and sketch color effortlessly. This helped me to grow as an artist and levelling up my skills.

Good sketch book quatily is also good but if you use masking tape on it the paper will tear off otherwise good for sketching, watercolor.....🙂
