Dried King Fishes: Most of the dry fishes available in the market are the reprocessed fish from fish markets. The fish once caught will be immediately refrigerated and will be sold in market for minimum 4 days as fish. If it is not sold, it will be dried and sold as dried fish. The thing is that the unsold or the waste material of Fish Markets will be dried and sold as dry fishes. This is the common practice. What is Traditional Preservation? For traditional preservation, the fish which is to be preserved shouldn't be refrigerated. The fish once caught will be immediately put into salt and buried in the sea sand for 3 days. This is the process which converts the fish into a preserved fish. In coastal regions of Rameswaram, the above said process is called "Paadam" which means “Preservation” and the product obtained in this process is called "Pattarai Fish" which means “Preserved Fish”. After 3 days, it will be taken out from the sand and will be coated with turmeric powder which acts as the Antifungal/Antimicrobial agent. This type of preservation is done for fishes having huge flesh and more blood which makes the typical drying process more challenging. This will take more time to dry and will not last for a long time. Mostly, Fishes like ? King Fish/Vanjaram/Sheer Fish ? Ribbon Fish ? Leather Skin Fish/Paarai ? Mackerel/Kumula/Ayulai are preserved in this method. The unsold refrigerated fish or the wastes of fish market can also be processed in the same manner.
