Health Benefits: High in fibre/Low Glycemic Index (improves digestion & blood sugar balance), High in antioxidants/phytonutrients (helps cardiovascular health & blood pressure), High in digestible protein (contains all essential amino acids) Recipes: Buckwheat is a versatile all purpose flour that can be used in rotis & crepes/dosas. Buckwheat Crepes: Mix the following items in a blender buckwheat flour (1 cup), 3/4tbsp flaxseed powder, (400ml of milk or almond milk), sea salt, until it turns into a thick batter and make crepes in a non stick pan. You can choose sweet (honey/maple syrup) or savoury (sauteed vegetables/eggs) toppings. Buckwheat Dosa: Mix buckwheat flour (1 cup), urad dal powder (1 tbsp), coriander, 2 cups water and mix into a batter. Make crispy dosas in a non stick pan. Serve with coconut chutney!
