Description

Discover the delectable cuisine of the Mughal Empire in Salma Husain’s The Emperor’s Cuisine.

Summary of the Book

The Mughal Empire left its mark on India in more ways than one. The architecture and religious connotations are possibly its most eloquent marks, but the influence of Mughal cuisine on Indian cooking cannot be ignored. This book looks at the Mughal Emperors through their palette, their fondness for food and their favourite dishes. It lists each ruler’s favourites, describing their fondness for certain flavours over others. It offers readers recipes for dishes ranging from soups to exotic nonvegetarian dishes that are, quite literally, fit for royalty. The book collects these recipes from ancient Persian manuscripts, detailing their evolution and availability. A grand celebration of the Persian and Mughal cuisine, this is a book for the foodie in everyone.

Much ado

The information content is pitiful and leaves much to desire. The collection of recipes and facts is pitiful though the pictures are superb. But at the end of the day the book is supposed to have a treasure trove of anecdotes on the Mughals and their food which it doesn't have.
