  • Description

The Essential Marathi Cookbook, a modern, easy-to-use introduction to several Marathi sub-cuisines, travels across the regions and religions of Maharashtra to bring out the most authentic and appetizing recipes from the state. Journalist and chef Kaumudi Marathe presents a varied and nuanced selection ranging from the delectable entrées long associated with Maharashtra, to appetizing and unusual side dishes, and a plethora of desserts, as well as, lesser-known but equally tantalizing family and regional specialties which have never before appeared in an English-language cookbook. The comprehensive introduction describes Marathi cooking basics, ingredients and techniques and also explains the special spices used in Marathi kitchens along with the methods for their best use in seasonings. Packed with personal anecdotes and food memories from the author and other contributors to the book, The Essential Marathi Cookbook is the definitive guide to Marathi food and customs. Recipes include: Pithla-Bhat (zesty gram flour sauce with hot rice), Shiryachi Poli (sweet semolina-stuffed bread), Ambyacha Loncha (green mango-mustard pickle), Spicy Kolhapuri mutton, Suranachi Koshimbir (elephant's foot yam salad), Kelphulachi Bhaji (banana blossom stir-fry), Pach Dalinchi Amti (five lentil stew), Mugache Kadhan (Konkan lentil-coconut pudding), Bol Marie (East Indian coconut pie), Pathare-Prabhu baked karanjis (coconut crescents), Kharvas (first-milk custard), Khudi (sautéed East Indian-style chicken), Ukad Shengule (sorghum pasta), Kaumudi's grandmother's Lettuce Salad

    Authentic n fool-proof!!!

this is a lovely book and something which i refer often whenevr i want to cook something fool-proof. coz u never go wrong with this cookbook if u follow the measurements accurately. i honestly believe dt cookbooks wh look bland n boring with no colourful pictures or fancy fonts r de ones wh hav a lotta stuff...it has a variety of veg n non-veg recipes, traditional masala-blends. the sonari masala blend from this book is a kitchen staple for me...i sprinkle it on most of my veg stir-fries n de...

    wow

I love this book, yes, maybe this book is not for beginners its for people who have eaten Maharashtrian cooking and want to recreate the recipes at home, my mother in law is an awesome Maharashtrian cook and and double checked the recipes of my mother in law to those in this book, they are almost the same, same method and same ingredients,

    i love this book

Also people may not be understanding the recipes cause it doesn't have any photographs, seriously? lol.

i am not very sure about the modern part.

I found the book dry and not too informative. It missed a whole varity of marati food like the street food stuff - misal pav or vada pav or the pav bhaji. it would have been nice to see how each dish looks like but it is just plain read.

    Good choice

Book looks good but not very happy with the yellowish pages. Familiar recipes and looking forward to trying them out in my own kitchen.

    Really disappointing

I had just moved to Pune and wanted to try my hand at Maharashtrian cooking. My bad luck that I picked up this piece of crap. This is a fine example of how not to write a cookbook. NOT RECOMMENDED. My rating is 0 but flipkart is not allowing me to do that so I have to mark 1 star!
