During the winter season, Mustard is the crop of choice in northern India. The intense yellow-coloured Mustard flowers begin to bloom in the month of December and continue to blossom till the fall of march. Our bees forage around the Mustard fields to collect the nectar and pollen of these flowers to create unique with creamy crystallized honey. This unfiltered honey has not been pasteurized and therefore contains all naturally occurring enzymes, vitamins, flavonoid, bee pollen & other bio-active compounds presents in the natural raw honey. What is Unpasteurized, Unfiltered, and Mono-floral honey. Unpasteurized Honey: Most commercial honey undergoes pasteurization, a process in which the honey is heated to around 80°C. Unfortunately, this heat treatment can obliterate a significant portion of the honey's inherent bio-active compounds. Our honey, in contrast, remains unpasteurized. It retains its full complement of naturally occurring bio-active compounds, antioxidants, antimicrobial molecules, and essential nutrients. This decision ensures that you receive honey in its most wholesome and unaltered form. Unfiltered Honey: Over time, honey tends to crystallize, leading to changes in its texture and appearance. To counteract this, many commercial honey products are finely filtered, removing elements that may cause crystallization. While this may enhance the visual appeal of the honey, it often does so at the expense of its natural richness. Our honey, however, remains unfiltered. It maintains its unique character with naturally occurring bee pollen intact. The only intervention it undergoes is a gentle straining process, which eliminates unwanted bee debris, wax, and extraneous foreign substances. Mono-floral Honey: The true magic of our honey lies in its mono-floral nature. Mono-floral honey is a product of the bees' exclusive dedication to a single flower's nectar.
