It is produced in the autumn in the Nilgiris region of northern India, where the climate is very stable and the soil is fertile. The color of the saffron flowers varies from light yellow to deep purple, depending on the concentration of stigmasterol. The best quality saffron has a deep ruby red color. Kashmiri saffron is the only pure, natural and unadulterated form of saffron that is available in the world.
