    • Spinach is also an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2. Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach. Spinach contains approximately 250 mg of calcium per cup. However, it is less easily absorbed than calcium obtained from dairy sources. Spinach has a high oxalate content, which binds to calcium. This makes it difficult for our bodies to use. Spinach is also one of the best sources of dietary magnesium, which is necessary for energy metabolism, maintaining muscle and nerve function, regular heart rhythm, a healthy immune system, and maintaining blood pressure.
    Soil Nutrient Requirements
    • Spinach grows most quickly in well-drained soil rich in organic matter such as compost or composted manure and with a pH of 6.5 to 7. Sowing Season -All year round except Dec-FebSoil Type and Prep - well-drained soil rich in organic matter such as compost or composted manure; pH of 6.5 to 7.Germination Temperature -10°C - 22°C.Sunlight - Sun to partial shade.Water - Since spinach grows best in cold weather, avoid over-watering.Pests and Diseases - Diseases such as Downy Mildew, Anthracnose, Cladosporium Leaf spot, Stemphylium leaf spot, Damping-off, Root Rot, and pests like Cutworms, Flea Beetles, Slugs or Snails, Aphids, Leaf Miners. Varieties of Spinach - Savoy Spinach, Bloomsdale, Tyee, Regiment, Indian Summer, Catalina, Space Spinach, Red Carnival, New Zealand, Malabar Spinach. Companion Plants -Asparagus, Brussel Sprouts, Cabbage, Celery, Dill, Eggplant, Lettuce, Onions, Peas, Peppers, Radishes, Strawberries, Tomatoes.
    Sowing Method
    • Plant spinach seeds an inch apart in rows 14-18 inches apart and cover the seeds with a 1/2 inch of soil. Keep the soil moist and after the seeds germinate thin them to stand 3-5 inches apart. Most gardeners like to do this in several passes to determine the strongest plants to save. Fertilize only if necessary due to slow growth, or use as a supplement if your soil pH is inadequate.When seedlings sprout to about two inches, thin them to 3-4 inches apart.Beyond thinning, no cultivation is necessary. Roots are shallow and easily damaged.Keep soil moist with mulching.Water regularly.Spinach can tolerate the cold; it can survive a frost and temps down to 15ºF (-9°C). (See local frost dates) Young spinach is more tender; cover if cold temps are in the forecast.
