Mix and let it ferment overnight (8–10 hours)., Add salt and mix well., Grease idli moulds with oil and pour the batter into each mould., Steam in an idli steamer for 10–12 minutes or until a knife comes out clean., Serve hot with coconut chutney and sambar.

    • Dry Mix: Store in a cool, dry place, away from direct sunlight. Keep the pouch tightly sealed after each use., Batter: If pre-mixed, refrigerate and use within 2–3 days. Do not leave batter at room temperature beyond 8 hours., Cooked Idlis: Store in an airtight container. Best consumed within 12 hours or refrigerate for up to 2 days.
